Chococonut Muffins

Makes 16

These delicious muffins have a very subtle coconut flavour, and work well with dark chocolate chips. I used wholemeal flower in mine, which makes for a slightly healthier muffin (but does take away from the taste a little bit).

IngredientsChococonut Muffins

  • 200g self-raising flour
  • 180g caster sugar
  • 2 eggs
  • 100ml sunflower oil
  • 220ml coconut milk
  • 50g desiccated coconut
  • 60g chocolate chips


  1. Preheat the oven to 200°C
  2. Mix the flour, sugar and desiccated coconut in one bowl
  3. In a separate bowl, whisk together the oil, eggs and coconut milk
  4. Pour the wet mixture into the dry, and mix together until smooth
  5. Fold in the chocolate chips (they shouldn’t sink to the bottom)
  6. Divide the mixture between 16 muffin cases, and bake for 18 minutes
